Ingredients

  • 1 8-ounce container mascarpone cheese, room temperature

  • 1 stick unsalted butter, room temperature

  • 3/4 cup brown sugar, packed

  • 2 large eggs, room temperature

  • 1 teaspoon vanilla extract

  • 4 overripe bananas, mashed

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • 1 cup highest-quality dark chocolate chips

Directions

Step 1

Preheat oven to 350 degrees F. Butter or spray a standard loaf pan.

Step 2

In a stand mixer or bowl with an electric mixer, beat mascarpone cheese, butter, and sugar together until fluffy. Beat in eggs and vanilla. Stir in mashed bananas.

Step 3

Stir dry ingredients together in a separate bowl. Add flour mixture into wet mixture until just combined. Fold in chocolate chips. Pour into prepared loaf pan.

Step 4

Bake 75 minutes or until a toothpick inserted in the center comes out clean.

Sarah's Notes:  I like using bananas that are completely black and overripened. If yours aren't as ripe, you may want to add a touch more brown sugar (figure 2 tablespoons or so). Also, I used a larger container of mascarpone (about 8.8 oz) which is totally fine. For chocolate chips, I like Guittard.
